ION Harbour Maintains Two Michelin Stars For Third Consecutive Year

ION Harbour by Simon Rogan has retained its two Michelin stars following the latest Michelin Guide Malta announcements, remaining the island’s only two Michelin-starred restaurant for the third consecutive year.

The accolade marks another milestone for Iniala Harbour House, where the restaurant is located, capping what has been described as a standout year for the Valletta-based property. Iniala recently secured two Michelin Keys, the Green Key eco-label and reaffirmed its Forbes Five-Star status.

Chef patron Simon Rogan said retaining the two-star rating reflects the team’s ongoing commitment to consistency and craftsmanship. The restaurant operates under a farm-to-table philosophy, placing strong emphasis on seasonality and collaboration with Maltese farmers, growers and producers.

Led locally by executive chef Oli Marlow and head chef Christian Cali, ION Harbour continues to position itself at the forefront of Malta’s fine dining landscape. The restaurant’s menus are built around ingredient-led concepts, highlighting regional produce and sustainable sourcing practices.

Signature dishes have included reinterpretations of local flavours such as truffle pudding glazed in carob molasses, stout from The Brew and aged Maltese pecorino — examples of how traditional ingredients are elevated within a contemporary fine dining context.

The two-star retention reinforces Malta’s broader push to strengthen its reputation as a high-end culinary destination. The Michelin Guide’s expansion into Malta in recent years has played a central role in positioning the island on the international gastronomic map, with ION Harbour remaining its highest-rated establishment.

Set within restored 17th, 18th and 19th century townhouses overlooking Valletta’s Grand Harbour, Iniala Harbour House combines heritage architecture with contemporary luxury hospitality. The property has increasingly positioned itself within the premium experiential travel segment, targeting high-spending visitors seeking both culinary and cultural depth.

Room rates at Iniala Harbour House currently start from approximately €400 per night on a bed-and-breakfast basis, reflecting its positioning at the top tier of Malta’s hospitality market.

With the latest Michelin confirmation, ION Harbour consolidates its standing as Malta’s benchmark for fine dining — and a central pillar in the island’s ambition to compete internationally on culinary excellence.
